Little bit different than usual pumpkin recipe. Cooked with mustard oil and mixed with prawns which I call it Mustard pumpkin.
Ingredients : Pumpkins 400g, mustard oil 4 tbsp, garlic cloves 3-4 pcs, prawns medium size 8-10 pcs, crashed black pepper 1/2 tbsp, salt to taste, red & white onion paste 1/2 cup, chopped tomatoes 1 cup, salt to taste, turmeric powder 1/3 tsp , coriander powder 1/3 tsp, warm water 1 cup, green chilies to your taste , mustard, powder 1 & 1/2 tbsp, enough water to mix
Cooking method :
Step – 1 : Make some big and thick slices of butter Pumpkins to fry. Heat some mustard oil on a frying pan and fry sliced pumpkins until slightly soften on low heat. Add few pieces of smashed garlic in the oil to get some extra flavor while frying.
Remove pumpkins when done and keep them separate. You can take fried garlic out as well. Use the same pan and oil to cook the rest.
Step – 2 : Marinade some prawns with salt and pepper only. Then fry them in the same Pan and oil until they change the colour a little bit. Remove prawns and keep aside when done.
Step – 3 : Use same pan and oil. Add some red and brown onion paste, fry on a medium heat until raw smells are gone then add chopped tomatoes and salt. Cook until tomatoes are melted.
Add chili powder, turmeric powder, coriander powder and little bit of water so they don’t burn.
Saute in low heat until oil separates then add water as per your choice so pumpkins get covered by the water and cook thoroughly.
Add fried pumpkins and prawns once water starts bubbling up.
Add few pieces of green chilies as per your taste. Cover and cook until pumpkins are soft enough to eat
Just before end of your cooking take a small mixing bowl and add some mustard powder and water. mix them very well then add to the cooked gravy.
Cook for another minute then serve warm.
